Ingredients
Sev
2 Cup Besan Flour (gram flour- fine)
½ Cup of water
½ TSP Fennel(Saunf) seeds – crush them
1/8 TSP Baking Soda (Soda Bi Carb)
Jaggery Coating
1½ Cup crushed jaggery
½ Cup of water
Method:
1. Place besan in a large bowl, add the baking soda and fennel seeds, and combine well.
2. Add ½ cup of water to make a medium thick dough. Let it rest for 10 minutes.
3. Meanwhile, heat oil in a frying pan.
4. Using a sev making machine, make sev and cook on high heat for 2 minutes and then turn them over. Fry for 2-3 minutes more till they turn golden in colour.
5. Take them out and let them cool down for few minutes.
6. In a large pan (no heat) mix the crushed jaggery powder with water and let it soak for 5 minutes.
7. Turn the heat to low and cook the mixture for 5 minutes till it becomes a syrup.
8. Do the water test to check that it is ready. Take some water in a cup and add a drop of syrup in it. If it does not spread, then it is ready.
9. Now add the sev in the syrup and stir till they get a coating of the syrup. They will now look brown. Enjoy as a tasty and healthy snack anytime.
